🛒 Ingredients
▪ 1300gr. gammon
▪ 2 oranges with their peel
▪ 1 lemon only the peel
▪ 2 bay leaves
▪ 1 cinnamon stick
▪ 4 cloves
▪ 1 pineapple compote
▪ 2 tbsp. Brown sugar
🥣 Method
1. Cover the gammon in water for 6-8 hours. Put the gammon in a pan large enough to hold and add water to cover it. Halve the oranges and squeeze their juice and also add their peel (cut with a knife, not grated). Sprinkle the gammon with all the other herbs. We cook until it starts to soften.
2. Carefully transfer the gammon to an oven dish and, using a small, sharp knife, carefully cut away and remove the skin but leave on, a layer of fat. Pierce the intersections of the diamonds with the cloves. Pour in the pineapple juice and sprinkle over the sugar mixture. Roast for 30-40 minutes, basting the fruit with the juices in the pan once or twice until everything is caramelised and golden.
3. When it is cooked and once it is cooled, remove the cloves and slice the ham into thin pieces. We transfer it to a plate and decorate it with the baked pineapple slices.
